Easy Peach Cobbler with Canned Peaches
A classic, comforting dessert that uses pantry-friendly canned peaches and a simple buttery topping.
Ingredients
Peach Filling
- 2 cans (15 oz each) sliced peaches in syrup or juice, drained (reserve a little syrup if desired)
- ½ cup sugar (adjust depending on peach sweetness)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 tablespoons cornstarch
Cobbler Topping
- 1 cup all-purpose flour
- ¾ cup sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk
- ½ cup butter (1 stick), melted
Instructions
- Preheat oven: Heat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Prepare peaches: Mix drained peaches with sugar, lemon juice, vanilla, cinnamon, and cornstarch. Spread into the baking dish.
- Make topping: In a bowl, combine flour, sugar, baking powder, and salt. Stir in milk until just combined.
- Assemble: Pour the batter evenly over the peaches. Drizzle melted butter over the top.
- Bake: Bake for 45–55 minutes, until the top is golden brown and the filling is bubbly.
- Serve: Let cool slightly and serve warm with vanilla ice cream or whipped cream.
