Sausage Egg Breakfast Casserole

Here’s a classic Sausage Egg Breakfast Casserole that’s perfect for breakfast, brunch, or meal prep.

Sausage Egg Breakfast Casserole

Serves: 8
Prep Time: 15 minutes
Cook Time: 45–50 minutes

Ingredients

  • 1 pound (450 g) breakfast sausage
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • 4 cups cubed bread (day-old bread works well) or 3 cups frozen hash browns
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped green onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the sausage in a skillet over medium heat, breaking it into crumbles. Drain any excess grease.
  3. Spread the bread cubes (or hash browns) evenly in the baking dish.
  4. Top with the cooked sausage, then sprinkle the shredded cheese over everything.
  5. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  6. Pour the egg mixture evenly over the casserole.
  7. Let it sit for 10–15 minutes so the bread can absorb some of the liquid.
  8. Bake for 45–50 minutes, or until the center is set and a knife inserted in the middle comes out clean.
  9. Let the casserole rest for 5–10 minutes before slicing. Garnish with green onions if desired.

Make-Ahead Option

Assemble the casserole the night before, cover, and refrigerate. In the morning, let it sit at room temperature for about 20–30 minutes while the oven preheats, then bake as directed (you may need to add 5–10 minutes to the baking time).

Delicious Variations

  • Add sautéed bell peppers, onions, mushrooms, or spinach.
  • Swap cheddar for Monterey Jack, Swiss, or pepper jack cheese.
  • Use cooked bacon, diced ham, or turkey sausage instead of pork sausage.
  • Sprinkle paprika or a pinch of red pepper flakes on top for extra flavor.

Serve with fresh fruit, biscuits, or toast for a complete breakfast.
