Magic Tomato Salad
Ingredients
- 4–5 ripe tomatoes, sliced into wedges or thick slices
- 1 small red onion, thinly sliced
- A handful of fresh basil or cilantro, chopped
- 2–3 tablespoons extra-virgin olive oil
- 1–2 tablespoons vinegar (balsamic, red wine vinegar, or apple cider vinegar)
- 1 clove garlic, finely minced
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- A pinch of sugar or honey (optional, to balance acidity)
- Crumbled feta cheese or mozzarella (optional)
Instructions
- Add the tomatoes and onion to a bowl.
- Mix olive oil, vinegar, garlic, salt, pepper, and optional sugar/honey into a quick dressing.
- Pour the dressing over the tomatoes and toss gently.
- Add herbs and let the salad sit for 10–20 minutes so the flavors soak in.
- Serve fresh with bread to soak up the juices.
