Slow Cooker Potatoes
These tender, flavorful potatoes are an easy side dish that cooks with minimal effort.
Ingredients
- 2 lb (900 g) baby potatoes or Yukon Gold potatoes
- 2 tablespoons olive oil or melted butter
- 3 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional)
- 1 teaspoon dried rosemary or thyme
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Wash the potatoes. If they’re large, cut them into bite-sized pieces.
- Place the potatoes in the slow cooker.
- Add the olive oil or butter, garlic, salt, pepper, paprika, and herbs. Toss until evenly coated.
- Cover and cook:
- Low: 5–6 hours, or
- High: 2½–3½ hours,
until the potatoes are tender when pierced with a fork.
- Stir gently, garnish with fresh parsley if desired, and serve.
Optional variations
- Cheesy: Stir in 1 cup shredded cheddar during the last 15 minutes of cooking.
- Loaded: Top with sour cream, crumbled cooked bacon, shredded cheese, and sliced green onions.
- Lemon herb: Finish with a squeeze of lemon juice and fresh dill or parsley.
These potatoes pair well with roasted chicken, grilled steak, pork chops, baked fish, or a fresh salad.
