Slow Cooker Potatoes

These tender, flavorful potatoes are an easy side dish that cooks with minimal effort.

Ingredients

  • 2 lb (900 g) baby potatoes or Yukon Gold potatoes
  • 2 tablespoons olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 1 teaspoon dried rosemary or thyme
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Wash the potatoes. If they’re large, cut them into bite-sized pieces.
  2. Place the potatoes in the slow cooker.
  3. Add the olive oil or butter, garlic, salt, pepper, paprika, and herbs. Toss until evenly coated.
  4. Cover and cook:
    • Low: 5–6 hours, or
    • High: 2½–3½ hours,
      until the potatoes are tender when pierced with a fork.
  5. Stir gently, garnish with fresh parsley if desired, and serve.

Optional variations

  • Cheesy: Stir in 1 cup shredded cheddar during the last 15 minutes of cooking.
  • Loaded: Top with sour cream, crumbled cooked bacon, shredded cheese, and sliced green onions.
  • Lemon herb: Finish with a squeeze of lemon juice and fresh dill or parsley.

These potatoes pair well with roasted chicken, grilled steak, pork chops, baked fish, or a fresh salad.
