- 4 medium potatoes (about 2 lbs / 900 g)
- 1 small onion
- 1 large egg
- 3 tablespoons flour (or breadcrumbs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- Vegetable oil for frying
Instructions
- Prepare the potatoes
- Peel the potatoes and grate them using a box grater or food processor.
- Grate the onion as well.
- Place the mixture in a clean towel and squeeze out as much liquid as possible. This helps make the pancakes crispy.
- Make the batter
- Put the potatoes and onion in a bowl.
- Add egg, flour, salt, and pepper.
- Mix until combined.
- Fry the pancakes
- Heat a thin layer of oil in a skillet over medium heat.
- Drop spoonfuls of the potato mixture into the pan and flatten gently.
- Fry for about 3–5 minutes per side until golden brown and crisp.
- Drain and serve
- Place on paper towels to remove excess oil.
- Serve warm.
