A creamy, refreshing chicken salad with sweet grapes and a little crunch—great for sandwiches, wraps, or served on a bed of greens.

Ingredients

  • 3 cups cooked chicken, diced or shredded
  • 1½ cups seedless grapes, halved
  • ½ cup celery, finely chopped
  • ½ cup chopped pecans or walnuts (optional)
  • ⅓ cup red onion or green onion, finely chopped (optional)

Dressing

  • ¾ cup mayonnaise (or use half mayonnaise and half Greek yogurt)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard (optional)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 teaspoon honey (optional, for extra sweetness)

Instructions

  1. In a large bowl, combine the chicken, grapes, celery, nuts, and onion.
  2. In a small bowl, mix the dressing ingredients until smooth.
  3. Pour the dressing over the chicken mixture and gently toss until everything is coated.
  4. Cover and refrigerate for at least 30 minutes to let the flavors blend.
  5. Serve chilled on lettuce leaves, in a sandwich, with crackers, or in a wrap.

Tips

  • Rotisserie chicken works well and saves time.
  • Add chopped apples or dried cranberries for extra flavor.
  • For a lighter version, replace some or all of the mayonnaise with plain Greek yogurt.
