Chicken Salad with Grapes
A creamy, refreshing chicken salad with sweet grapes and a little crunch—great for sandwiches, wraps, or served on a bed of greens.
Ingredients
- 3 cups cooked chicken, diced or shredded
- 1½ cups seedless grapes, halved
- ½ cup celery, finely chopped
- ½ cup chopped pecans or walnuts (optional)
- ⅓ cup red onion or green onion, finely chopped (optional)
Dressing
- ¾ cup mayonnaise (or use half mayonnaise and half Greek yogurt)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard (optional)
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- 1 teaspoon honey (optional, for extra sweetness)
Instructions
- In a large bowl, combine the chicken, grapes, celery, nuts, and onion.
- In a small bowl, mix the dressing ingredients until smooth.
- Pour the dressing over the chicken mixture and gently toss until everything is coated.
- Cover and refrigerate for at least 30 minutes to let the flavors blend.
- Serve chilled on lettuce leaves, in a sandwich, with crackers, or in a wrap.
Tips
- Rotisserie chicken works well and saves time.
- Add chopped apples or dried cranberries for extra flavor.
- For a lighter version, replace some or all of the mayonnaise with plain Greek yogurt.
