Chicken Salad with Grapes

Ingredients

  • 2 cups cooked chicken, chopped or shredded
  • 1 cup seedless grapes, halved
  • ½ cup celery, finely chopped
  • ¼ cup red onion or green onion, finely chopped (optional)
  • ½ cup mayonnaise (or use Greek yogurt for a lighter version)
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste
  • ¼ cup chopped walnuts or pecans (optional)
  • Fresh parsley or dill for garnish (optional)

Instructions

  1. In a bowl, combine the chopped chicken, grapes, celery, onion, and nuts if using.
  2. In a separate bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until evenly coated.
  4. Chill for 30 minutes before serving for the best flavor.
  5. Serve on lettuce leaves, in a sandwich, with crackers, or in a wrap.

Tip

For a sweeter version, add a few chopped apples or dried cranberries. For extra protein and a lighter dressing, replace half the mayonnaise with plain Greek yogurt.
