Chicken Salad with Grapes
Ingredients
- 2 cups cooked chicken, chopped or shredded
- 1 cup seedless grapes, halved
- ½ cup celery, finely chopped
- ¼ cup red onion or green onion, finely chopped (optional)
- ½ cup mayonnaise (or use Greek yogurt for a lighter version)
- 1 teaspoon Dijon mustard (optional)
- 1 tablespoon lemon juice
- Salt and black pepper, to taste
- ¼ cup chopped walnuts or pecans (optional)
- Fresh parsley or dill for garnish (optional)
Instructions
- In a bowl, combine the chopped chicken, grapes, celery, onion, and nuts if using.
- In a separate bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the chicken mixture and stir until evenly coated.
- Chill for 30 minutes before serving for the best flavor.
- Serve on lettuce leaves, in a sandwich, with crackers, or in a wrap.
Tip
For a sweeter version, add a few chopped apples or dried cranberries. For extra protein and a lighter dressing, replace half the mayonnaise with plain Greek yogurt.
