Easy Chicken Potluck Casserole Recipe
This creamy chicken casserole is a crowd-friendly dish that’s easy to prepare ahead and bring to gatherings.
Ingredients
- 4 cups cooked shredded chicken (rotisserie chicken works great)
- 2 cans (10.5 oz each) cream of chicken soup
- 1 cup sour cream
- 2 cups cooked rice or cooked pasta
- 1½ cups shredded cheddar cheese
- 1 cup mixed vegetables (peas, carrots, or corn)
- 1 small onion, finely chopped (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- 1 cup crushed crackers or breadcrumbs
- 2 tablespoons melted butter
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, soup, sour cream, rice or pasta, vegetables, seasonings, and half of the cheese.
- Spread the mixture into a greased 9×13-inch baking dish.
- Sprinkle the remaining cheese on top.
- Mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole.
- Bake for 30–35 minutes until hot and lightly golden.
- Let it rest for 5 minutes before serving.
