This creamy chicken casserole is a crowd-friendly dish that’s easy to prepare ahead and bring to gatherings.

Ingredients

  • 4 cups cooked shredded chicken (rotisserie chicken works great)
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 cup sour cream
  • 2 cups cooked rice or cooked pasta
  • 1½ cups shredded cheddar cheese
  • 1 cup mixed vegetables (peas, carrots, or corn)
  • 1 small onion, finely chopped (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup crushed crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, soup, sour cream, rice or pasta, vegetables, seasonings, and half of the cheese.
  3. Spread the mixture into a greased 9×13-inch baking dish.
  4. Sprinkle the remaining cheese on top.
  5. Mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole.
  6. Bake for 30–35 minutes until hot and lightly golden.
  7. Let it rest for 5 minutes before serving.
