Crispy Potato Pancakes
Ingredients
- 4 medium potatoes, peeled
- 1 small onion, grated (optional)
- 1 large egg
- 2–3 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder (optional)
- Vegetable oil for frying
Instructions
- Grate the potatoes (and onion, if using).
- Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. This helps make the pancakes crispy.
- Transfer to a bowl and mix with the egg, flour, salt, pepper, and garlic powder until combined.
- Heat about ¼ inch (6 mm) of oil in a skillet over medium-high heat.
- Scoop about 2 tablespoons of the mixture into the pan and flatten gently with a spatula.
- Fry for 3–4 minutes per side, or until golden brown and crisp.
- Drain on paper towels and serve immediately.
