Crispy Potato Pancakes

Ingredients

  • 4 medium potatoes, peeled
  • 1 small onion, grated (optional)
  • 1 large egg
  • 2–3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • Vegetable oil for frying

Instructions

  1. Grate the potatoes (and onion, if using).
  2. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. This helps make the pancakes crispy.
  3. Transfer to a bowl and mix with the egg, flour, salt, pepper, and garlic powder until combined.
  4. Heat about ¼ inch (6 mm) of oil in a skillet over medium-high heat.
  5. Scoop about 2 tablespoons of the mixture into the pan and flatten gently with a spatula.
  6. Fry for 3–4 minutes per side, or until golden brown and crisp.
  7. Drain on paper towels and serve immediately.

Tip: If the mixture seems watery after sitting, squeeze out any extra liquid or stir in another tablespoon of flour before frying. Freshly fried potato pancakes are at their crispiest.
