Classic Meatloaf and Mashed Potatoes with Gravy
A comforting, homemade meal with a juicy meatloaf, creamy mashed potatoes, and rich brown gravy.
Meatloaf Ingredients
- 2 lbs (900 g) ground beef (or a beef/pork mix)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup breadcrumbs
- 2 eggs
- ½ cup milk
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried parsley or Italian seasoning
Glaze
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
Mashed Potatoes
- 2 lbs (900 g) potatoes, peeled and cubed
- 4 tbsp butter
- ½–¾ cup warm milk or cream
- Salt and pepper, to taste
Simple Gravy
- 3 tbsp butter
- 3 tbsp flour
- 2 cups beef broth
- Salt and pepper to taste
- Optional: a splash of Worcestershire sauce
Instructions
1. Make the meatloaf
- Preheat oven to 375°F (190°C).
- Mix ground meat, onion, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, and seasonings until just combined.
- Shape into a loaf on a lined baking tray or place in a loaf pan.
- Mix glaze ingredients and spread over the top.
- Bake for about 50–60 minutes, until cooked through.
- Rest for 10 minutes before slicing.
2. Make mashed potatoes
- Boil potatoes in salted water until tender (about 15–20 minutes).
- Drain and mash with butter and warm milk.
- Season with salt and pepper.
3. Make gravy
- Melt butter in a saucepan.
- Whisk in flour and cook for 1–2 minutes.
- Slowly add beef broth while whisking.
- Simmer until thickened; season to taste.
Serve slices of meatloaf over a bed of mashed potatoes with plenty of warm gravy on top. Add green beans, peas, or roasted vegetables for a classic dinner plate.
