🍰 New York Cheesecake (Classic Creamy Recipe)

New York cheesecake is known for its rich, dense, and ultra-creamy texture with a simple graham cracker crust.


🧾 Ingredients

Crust

  • 2 cups crushed digestive biscuits or graham crackers
  • 1/2 cup melted butter
  • 2 tbsp sugar (optional)

Filling

  • 900 g cream cheese (room temperature)
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tbsp vanilla extract
  • 2 tbsp all-purpose flour (helps prevent cracking)

👨‍🍳 Instructions

1. Prepare the crust

Mix crushed biscuits with melted butter and press into a springform pan. Bake at 180°C (350°F) for 8–10 minutes, then cool.

2. Make the filling

Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in sour cream, vanilla, and flour until creamy (don’t overmix).

3. Bake gently

Pour filling over crust. Bake at 160°C (325°F) for 55–70 minutes until edges are set but center slightly jiggles.

4. Cool slowly

Turn off oven, crack the door open, and let it cool inside for 1 hour. This prevents cracking.

5. Chill

Refrigerate for at least 6 hours (overnight is best) for perfect texture.
