Slow Cooker Pork Chops

A comforting, tender pork chop recipe with a savory gravy that’s easy to prepare.

Ingredients

  • 4–6 boneless or bone-in pork chops (about 2–3 cm thick)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil (for browning, optional)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1½ cups chicken broth
  • 1 can (about 300 g) cream of mushroom soup (optional for a creamy version)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, to thicken gravy)

Instructions

  1. Season the pork chops
    • Pat pork chops dry and season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  2. Brown for extra flavor (optional)
    • Heat olive oil in a skillet over medium-high heat.
    • Sear pork chops for 2–3 minutes per side until lightly browned.
  3. Prepare the slow cooker
    • Place sliced onions and garlic in the bottom of the slow cooker.
    • Add the pork chops on top.
  4. Make the sauce
    • Mix chicken broth, cream of mushroom soup (if using), Worcestershire sauce, and thyme.
    • Pour over the pork chops.
  5. Slow cook
    • Cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the pork is tender.
  6. Thicken the gravy (optional)
    • Remove pork chops.
    • Stir in the cornstarch slurry and cook on HIGH for 10–15 minutes until the gravy thickens.
    • Return pork chops to the sauce before serving.

Serving Ideas

Serve with:

  • Mashed potatoes (great for soaking up the gravy)
  • Rice
  • Egg noodles
  • Steamed green beans
  • Roasted carrots

Tip: Pork chops can dry out if overcooked. For the most tender result, choose thicker chops and avoid cooking longer than needed. Bone-in chops usually stay juicier in a slow cooker.
