Slow Cooker Potatoes
This simple recipe makes tender, flavorful potatoes with very little hands-on work.
Ingredients
- 2 pounds (900 g) baby potatoes or Yukon Gold potatoes, halved if large
- 2 tablespoons olive oil or melted butter
- 3 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional)
- 1 teaspoon dried rosemary or thyme (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Wash and dry the potatoes.
- Place them in the slow cooker.
- Add the olive oil or butter, garlic, salt, pepper, and any optional seasonings. Toss to coat evenly.
- Cover and cook:
- Low: 5–6 hours, or
- High: 2½–3½ hours,
until the potatoes are fork-tender.
- Sprinkle with fresh parsley before serving.
Optional additions
- Cheesy: Stir in ½–1 cup shredded cheddar during the last 15 minutes.
- Herb butter: Add extra butter and fresh herbs just before serving.
- Loaded potatoes: Top with sour cream, crumbled bacon, shredded cheese, and chopped green onions.
These potatoes pair well with roast chicken, grilled steak, pork chops, or a simple green salad.
