Slow Cooker Potatoes

This simple recipe makes tender, flavorful potatoes with very little hands-on work.

Ingredients

  • 2 pounds (900 g) baby potatoes or Yukon Gold potatoes, halved if large
  • 2 tablespoons olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 1 teaspoon dried rosemary or thyme (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Wash and dry the potatoes.
  2. Place them in the slow cooker.
  3. Add the olive oil or butter, garlic, salt, pepper, and any optional seasonings. Toss to coat evenly.
  4. Cover and cook:
    • Low: 5–6 hours, or
    • High: 2½–3½ hours,
      until the potatoes are fork-tender.
  5. Sprinkle with fresh parsley before serving.

Optional additions

  • Cheesy: Stir in ½–1 cup shredded cheddar during the last 15 minutes.
  • Herb butter: Add extra butter and fresh herbs just before serving.
  • Loaded potatoes: Top with sour cream, crumbled bacon, shredded cheese, and chopped green onions.

These potatoes pair well with roast chicken, grilled steak, pork chops, or a simple green salad.
